As far as I can tell, in the RHEL 6 world, you are correct. I only know of one primary installation method, from which the installer chooses one or more desktop environments.
I suspect this carries over into the CentOS world, as well. I do know that CentOS is planning on "expanding" typical RHEL options -- I read that CentOS 7 will offer a 32 bit option, unlike RHEL 7.
